Pequenes: Chilean Empanadas

As I’m going vegetarian for the summer, I looked on Pinterest ( click here to see me Pinterest page) to find some vegetarian food to put on the blog that is still super yummy! I was looking for a South American dish just because and I found this recipe
from En Mi Cocina Hoy by Pilar Hernandez for Chilean Onion Empanadas called Pequenes. Earlier this week I made them for my family and they were amazing!Even though they weren’t quick to make, they were definitely worth the wait. This dish is perfect for a sharable appetizer and your fingers won’t get messy when you bite into it! Please enjoy Sra. Holy Smoker



It is comfort food Sunday again which means dinner will be high in calories and emotional satisfaction.  I have been wanting to recreate an entrée I used to get at a now defunct restaurant.  It was called “Smoked chicken pasta pie” and it contained at least a day’s worth of calories.
